In our transition from eating meat to eating a plant-based diet, we referred to multiple resources. The first is an excellent Starter Kit from Peta, acquired several years ago when we first tried a vegetarian diet, a time when my choice had to do with compassion for animals and sky-high cholesterol. As mentioned in other posts, after one year of not eating any meat, poultry or fish, my cholesterol returned to normal, with higher than average good cholesterol. I wish I had continued the diet. In addition to that starter kit, I’ve read several books, from the e-books I share and recommend on this page, to several others I’ve read on my computer with Kindle, the online library or purchased outright from Amazon and Indigo Chapters here in Canada.
